This Oregano comes to us from the heart of Sicily, Seven kilometers from Resuttano. Left on the branch to dry, This Oregano is intense with hints of mint, marjoram and lemon scents. Here at Josies Pizza Bar, We carefully crush it by hand. We believe in tradition and simplicity in order to achieve the highest quality and authenticity.

From scratch, Completely handmade. Only using the best Italian ‘00’ Flour on the market. Our dough contains no dairy or animal products which makes it vegan friendly. Always made daily, in-house, Using high quality DOP products. For us, Simplicity is key.

Food fuels the body and we are huge believers on being food conscious. We shop our produce from small businesses and local farms because we understand the importance of community and sustainability. Fresh ingredients is at the core of what we do. So, If it isn’t grown, we dont want it.

Nothing comes out of a can. Here at Josies we make everything from scratch. From Pizza Dough to Red Roasted Peppers to Sauces and everything in between. Our motto is always homemade. Our recipes are a mix between Calabria and Sicily - A way of paying homage to Josie’s parents who migrated here in the 60’s. We have taken traditional generational recipes and continued the tradition in our 27 foot truck. A taste of home is what we strive to give you because when you eat with us your family.

Our Wood? It is our cooking source and our one and only source of fuel. It is equally as important as the oven we burn it in. Our Fire wood is kiln dried and locally harvested. This hard wood endures a rigorous heat treatment process with a 44-48 hour forced hot air treatment at sustained temperatures. The wood is guaranteed disease, pest, mold and mildew free. Our wood blend consist of Cherry, Hickory, Maple, Beech, Ash and White Oak. This blend became our signature style.

Our pizza oven is something we truly cherish. Handmade by the Fiero Group, This oven is made with high quality materials from Modena, Italy. We traveled with this wood burning oven for two years before fabricating it into our pizza truck - We just couldn’t part ways with it.
